Actually maybe some spells you can dodge and some you cant because the wand movements vary from spell to spell so maybe its some and some, still, your best bet is to hide behind something solid like a gravestone.

personally, i have trouble seeing how there can be wizard duels with spells like Avada Kedavra around. An evil wizard can just cast it and if it hits home they win, because it is unblockable. Good wizards can't use spells like that because it is illegal. So it seems to me that in most cases the dark wizard should win.

Yeah but the duel cant always be with dark wizards. If Flitwick was a dueling champion surely he didnt go out and duel loads of dark wizards. I get the impression that dueling is of a sport like boxing.
