There are so many things, looking back into the books, that you could say "why wouldn't she have said it then..." and it turns out to be true. Dumbledore could have his reasons for not telling Harry, if indeed Harry is Gryffendor's heir (which I personally think he is) and if indeed Dumbledore knows (which I personally think he does.) Never let the "she would of told us...." become a trap.

J.K. Rowling has said in an interview that she likes Dumbledore because she can tell the truth using him and Hermione, and you don't question it. Dumbledore doesn't always tell all he knows, but he almost never lies. I don't think this is one of those instances he would have lied. He said himself that Tom Riddle (Voldemort) was the last remaining heir of Slytherin.

Very few people really believe that Lily was muggleborn. Most people who theorize the HP books realize that there's something "interesting" about Lily's parentage. They are most likely magical or squibs.
Gryffindor was a long time ago. I could be a decendant of Christopher Columbus, but so many generations have passed, I wouldn't know it.
