I do agree that they are bound (honor-bound) to serve the current headmaster at Hogwarts. But that that honor didn't extend to the phoney headmaster, Umbridge.

I don't think that Umbridge was really considered the headmistress. She was never let into DD office, maybe there is some magic that decides who is REALLY a headmaster etc.
