I don't think Dumbledore was talking about three specific "things" they did...
Remember, at the time the prophesy was made, right before Harry and Neville were born, Voldemort was almost at his highest point of power. You know how there's the sort of "mini-battle" in OotP at the Department of Mysteries? I think they were involved in three of these, or something like that. Yes, they fought against Voldemort three times, but there wasn't anything incredibly dramatic or important about these face-offs, just that there were three of them (well, three that James and Lily were a part of, and three that Frank and Alice were a part of).
