well, that was a non-important point, anyway... what do you think about the possibility that the inappropriate charm was making the goat milk something other than milk? 
The barman at The Hogs Head is Dumbledores brother, Aberforth
"He was a grumpy-looking old man with a great deal of long grey hair and beard. He was tall and thin and looked vaguely familiar to Harry." p300 UK version.
Besides the usual family resemblences, Harry saw a picture of him when Moody showed him the photo of the original Order.
This is probably how Dumbledore knew so much about the DA, like when the meeting took place, and how he managed to cook up a new version of events so quickly to avoid Harry being expelled.

My guess is he's like Sherlock Holmes' brother - more intelligent but less famous.
One thing I really love about these books is the different "good guys" we see... Some are obvious (Dumbledore, Arthur, Molly, even Lupin), others are a little less obvious (Mundungus, Sirius [to other wizards, the convicted murderer and famous Death Eater had to be not their top choice for an Order member at first]), and the bad good guys (Snape).
